SWEET PARFAIT BREAKFAST OPTION
Breakfast is my favorite meal of the day. I can have a good breakfast oriented meal anytime of the day.
My friend, cousin and I recently went for a little concrete jungle adventure. We decided to try out this lovely restaurant that was around the corner from us. It had really gorgeous contemporary interior decor. You can see more on that here. I decided to order a fruit bowl muesli so did Joey. My cousin kept it simple and ordered a chocolate milkshake. Keep in mind this was at four o’clock in the afternoon. The muesli reminded me of a parfait. It had been so long since I had a parfait and I had to recreate it.
Besides being dairy-free I also follow a plant-based LIFESTYLE, not “diet!”. Contrary to many people’s belief, a plant-based lifestyle is not boring. There is so much color, flavor and yummy goodness to it. This parfait is made with a dairy-free yogurt alternative. If you love coconut, you will surely fall head over heels with this coconut overnight oat parfait.

Setting time: Overnight
- Carbs: 66g
- Fat: 21g
- Protein: 11g
- Calories: 492
- 1 cup rolled oats
- 2 Tbsp. shredded coconut
- 1/4 cup of canned coconut cream
- 1 container (100 grams) coconut yogurt
- Grab a container.
- Add in all the ingredients, excluding the strawberries, to the container.
- Mix it all together until it comes to a thick consistency.
- Pop the container into the fridge overnight.
- Next morning. Cut up some strawberries and add them into the overnight oats.
This is a quick and easy, no bake breakfast option.
It’s a really good, healthy and delicious pre-workout option. Make sure to prepare it the night before and leave it in the fridge for the next morning.
